Why I chose it: Circle City is an independent bottler out of Noblesville, Indiana. They source barrels distilled by others, give them additional aging, and bottle them under their own label. I met the founder at the release party for this particular single barrel, which was hand-selected for Gold Eagle Wine & Spirits. Really great guy. (Gold Eagle is a fantastic store, by the way—quite a few of the bottles in this calendar came from there, and there’s a bigger story behind that for another day.)
This distillate originated at Heaven Hill, spent 8 years aging, and got a finishing stint in a second new oak barrel, making it a “double oaked” pour. Rich, bold, and a perfect example of what a little extra wood can do. I loved this find and was so excited to share it on day 2.
